Fresh Fish
Often people question how a restaurant not on a coast is able to obtain fresh fish. The answer, for AZUR, is Honolulu Fish Company. The company was founded in 1995 by a marine biologist. Every morning, they purchase fish from the local boats at an auction held on Pier 38 at about 5:30 in the morning. Then, it is immediately hung in ice on trucks and taken to their processing plant where the processors in lab coats process the fish. Finally, the fresh fish is placed in custom-designed holographic boxes (which reflect radiant heat to keep the fish colder) and shipped via Federal Express directly to AZUR. Our Executive Chef, Jeremy Ashby creates a special entree from the selected fish for the evening dinner service. Order quantities are kept low to sell quickly. Yes, it does cost more but we believe in fresh product in all areas. AZUR also buys many local, Kentucky food products but that's another story.
